Air fried Green Moong Dhokla (Green Gram Savoury Cake)


Ruma's signature air fried Green Moong Dhokla is one of a kind and very unconventional. She has given an interesting twist to a dhokla recipe by changing the choice of lentils to Green Gram. Air frying has become the latest blessing in disguise in the culinary world, so come let's see the recipe for this.

Recipe follows:

  • For this air fryer baked dhokla/ baked savoury cake ingredients are: one cup green gram, 1/2 cup rice soaked overnight. Made a batter of the soaked ingredients and seasoned with salt then added 1/2 cup of fresh yogurt. 
  • Into the batter add finely grated 1/2 cup of carrots, a diced onion, green chili, 1/2 cup of chopped coriander leaves,1/4 tsp asafoetida powder. Mix all the ingredients well and stir batter until you get a cake like batter consistency. 
  • Transfer the batter into a butter greased cake baking tray. Sprinkle on top a little Garam masala powder (Easily available in Indian stores). 
  • To prepare the Garam masala at home, slightly roast 1 cardamom, 2 cloves, 1/4 stick cinnamon, a dry whole red chili powder and grind all the spices.
  • Preheat the air fryer at 180c for four minutes and then bake the savoury cake at 180c for 24 minuets. Keep checking in every four minutes intervals until its done. 
  • Check the cake with a skewer or knife whether it is baked well or not. When the skews remains clean that means it cooked. 
  • After baking cut the savoury cake into equal squares. Keep aside.
  • For the tempering that goes on top of the savoury cake: heat a pan with a tsp butter or oil, temper with 1/2 tsp cumin seeds and 3-4 trimmed green chilies. Add a cup of water and two tbs sugar. Let the sauce boil and let it reduce to 3/4 cup. Pour the reduced sauce on top of the savoury cake and serve hot.
  • You can also squeeze some fresh lemon juice on it.
