Cauliflower & Cabbage chutney
Kasturi's Cauliflower & Cabbage chutney recipe is inspired by the popular South Indian Pachadi. It is spicy, flavorful and has the goodness of many vegetables.
Recipe follows.
- In a pan heat 2 tbsp of oil, temper 1/4 tsp of cumin seeds, saute 8 green chilies, 8 cloves of garlic, half inch of diced ginger, 2 diced tomatoes, 1 small diced cabbage and cauliflower. Season with salt, cover the pan with a lid and let it cook thoroughly.
- Once all the veggies are cooked, let it cool. when the veggies cool down transfer it into a blender and make a paste out of it.
- In another pan heat a tbsp of oil, temper with 1 tsp of brown mustard seeds, 1/4 tsp of cumin seeds, 2 whole red chilies, curry leaves and a pinch of asafoetida. Transfer the paste into the pan and mix everything well.
You can enjoy this with steamed rice.
