Egg Kolhapuri
Kasturi's Egg Kolhapuri is a Maharashtrian delight which is full of spices and hot to taste. People like it because it's spicy and hot.
Recipe Follows.
- Boil eggs as per your requirement and cut them into halves. Season with salt and shallow fry the egg halves on a flat tawa or pan.
- Remove the fried eggs and keep them aside.
- Now to make the curry, finely dice one large onion, 4 large garlic pods, half an inch ginger, 2 green chilies and 2 tomatoes.
- Heat 2 tbsp oil in a pan, saute 4 cloves, 8 black pepper corns, after a minute saute the diced onions, green chilies, ginger and garlic. After a while when they turn brown season with 1 and 1/4 tsp turmeric powder, 2 tsp garam masala (Easily available in Indian stores) and 2 tsp of red chili paste. mix everything well and add half a cup of water so that the dry spices don't get burned.
- Add the tomatoes and mix all the spices well, then when the tomatoes become soft, add 1/4 cup of poppy seeds, 4 dried red chilies and desiccated coconut. Cover and cook for 2 minutes and then add 2 cups of hot water, mix everything well and cover and cook for 5 minutes.
- Transfer the cooked gravy once cool into the blender and make a paste.
- Heat 1 tbsp of clarified butter, then pour in the paste. you can also add some water as per your desired consistency. Place the fried egg in the gravy and cover and let it cook for 3 more minutes. Add salt as per your taste.
- Garnish with dried fenugreek leaves and enjoy with flat breads or rice.
