HIGHLIGHT RECIPE :Roasted Duck

TWCT is proud to publish today's highlight recipe no. 1 , Roasted Duck by its talented member Mrs. Juli Bharali from Assam, India. Duck is a popular Assamese delicacy and Julie's roasted duck recipe has the perfect blend of spices and citrusy flavors.                                                           

Recipe Follows.

Ingredients:

Duck:1
Baby potatoes: 2-3
Baby onions:5-6
Garlic pods:5-6
Orange slices:2-3
Olive oil:2-3 tbs
Butter:2-3
Black pepper powder: 1/4tsp
Cinnamon powder: 1/4tsp
Nutmeg powder: 1/4tsp
Salt:as per taste

Method: 
  • Clean and wash the duck thoroughly and rub it with salt ,cinnamon , nutmeg powder ,black pepper powder and olive oil all over the duck.
  • Rub the inside of the duck with butter and Whole garlic cut into half thoroughly.
  • Put the potatoes,onion ,garlic orange slices and herbs like oregano ,basil and thyme. 
  • Tie the duck with a thread and put it in the oven tray and roast in a preheated oven at 200 degrees for 45 mins ,then reduced the temp to 180 degrees and roast further for one hour. 
  • Check the duck in between and pour some olive oil over it. Roast till brown on all sides and cooked properly. Serve with baked or sauteed veggies ,mashed potatoes and bread
