Highlight recipe: Shahi Tukra (Bread Pudding)
TWCT is glad to publish its highlight recipe Shahi Tukra made by our talented home chef Mrs. Puspita Hazarika Deka. Puspita is from Assam, India and is an enthusiastic member. Shahi Tukra (bread pudding) has always been a celebration recipe in India and is rich, creamy with the goodness of dry fruits.
Recipe follows.
- The recipe has 3 parts. Firstly preparing a sugar syrup, secondly frying the bread pieces, thirdly making a rabri (reduced sweetened milk, creamy in texture) and finally plating everything together.
- Prepare sugar syrup with some cardamom seeds and let it cool down.The quantity of the syrup has to be enough to soak all the fried bread pieces and the consistency of the syrup has to be medium.
- To prepare the rabri: Heat a pan and pour 1L milk and stir it until it reduces and becomes thick in consistency, then add condensed milk (100 gm),almonds and pistachios,cardamom powder. When the amount of milk reduces and becomes thick turn of the gas and keep it aside. Please ensure that you have to keep stirring the milk constantly to avoid burning of the milk.
- Refrigerate the rabri for some time.
- Now take 4 pieces of bread and cut it into halves which equals to 8 pieces.In a frying pan put some clarified butter and toast/fry the pieces of bread till it becomes crisp.
- Dip the pieces of bread in the sugar syrup(which is already made ) and take it out immediately. Take any kind of serving plate , put some rabrii and spread it evenly.
- Plate the pieces of bread as you want and pour the leftover rabrii over the pieces of bread. lastly garnish generously with dry fruits.
