Highlight Recipe: Vanilla butter ring cake
TWCT is glad to publish its highlight recipe no. 1 today, Vanilla butter ring cake by Mrs. Julie Bharali. Mrs. Julie Bharali is from Assam, Indian and is an excellent baker and always shares the best of her recipes with us. The Vanilla butter ring cake has a surprise filling of mixed fruit jam which makes this tea time delight even more special.
Recipe follows.
Ingredients:
- 200 gms flour, 50 gms custard powder, 2tsp baking powder, 175 gms castor sugar, 4 eggs, 200 gms butter, 2 tsp vanilla essence, 3-4 tbsp milk, mixed fruit jam 4tbsp.
- Sieve together flour, custard powder and baking powder and keep aside.
- whisk the eggs till its frothy.
- Cream together butter and sugar, to it add the beaten eggs and mix well.
- Add the vanilla essence and sieved flour alternatively with milk and mix.
- Pour half of the batter into a ring mould.
- For the filling, beat the mixed fruit jam in a small bowl with a spoon and pour the jam all over the batter. Then pour the remaining cake batter over the jam n cover it completely.
- Bake in a preheated oven at 180c for 35 - 40 mins or until the skewer when inserted in the cake comes out clean.
- Cut into slices and serve with coffee / tea.
