Mint & Coriander Chicken
Kasturi's Mint & Coriander chicken is a burst of flavors. This recipe is simple and perfect for summers, well it's summer here in South Africa. So let's get started.
Recipe follows.
- Wash and dry the chicken pieces and keep it aside.
- In a pan, heat 4 tbsp oil and saute 4 crushed green cardamoms and 1 cinnamon stick.
- Now when the spices release their aroma saute 2 diced onions, 4 large (diced) garlic pods, and half an inch (diced) ginger. Now let everything turn brown.
- Once all the sauteed ingredients turn brown, add in the chicken pieces and fry them well for at least 7 mins.
- Season the chicken with 2 tsp red chili powder, 1/4 tsp of turmeric, 2 tsp Chicken masala (spice mix), 2 tsp garam masala and salt. Mix everything well and cover and let it cook for 20 more minutes. Keep stirring in intervals to avoid burning.
- In the mean time, we need to prepare a coriander & mint chutney. Wash half a bunch of coriander and mint leaves and finely chop them. Take 5 green chilies. Put everything in your blender, add little salt and pour a little water for blending it into a fine paste. Once the paste is ready, transfer it onto the chicken. Coat the chicken well with coriander and mint and let it cook covered for 10 more minutes.
- If you need the gravy consistency to be more then you can add water.
- Serve in a pot and squeeze some fresh lemon juice.
- Enjoy with some flat breads or rice.
