Rasmalai (Indian Dessert)


TWCT is glad to publish today's highlight recipe, Rasmalai by our talented home chef Mrs. Puspita Hazarika Deka, from Assam India. Rasmalai is a traditional and very popular dessert, which is always preferred during any festivities. 

Recipe follows.
  • To make the rasmalai balls: Take 1/2 L milk in a pan and boil it, curdle it by adding lemon juice and make 'chena'(cheese curd), strain it out with a cheese cloth. Drain the water completely from the cheese curd then leave it for sometime. Mash the cheese curd (chenna) and make small balls, as many as you want.  
  • To make sugar syrup: Boil some amount of water and add sugar, cardamom seeds to it. Stir it well.
  • Then drop the the rasmalai balls in the sugar syrup and keep it for 5-10 mins. Take the rasmalai balls out of the syrup .
  •  To make rabri (Reduced sweetened milk):Take 1 L milk ,boil it and stir occasionally until it becomes thick. Add chopped pistachios, almonds,100gm condensed milk in it and mix well. Dip the rasmalai balls in the thickened milk, add 1/2 tsp cardamom powder and stir it gently, keep it on a low flame for another 5mins. 
  • Before serving it let it refrigerate for few hours and then enjoy.
