Spinach mix veg
Try this winter veggie delight in Ruma's way, as it’s an absolutely delicious and healthy recipe. This is a simple pan fried recipe of spinach with potato, carrots sautéed with onions, garlic, ginger and green chilies. Read the recipe to find out more.
Recipe follows.
- Take a bunch of farm fresh spinach, thoroughly washed. Roughly chopped and keep it aside.
- Take two roughly chopped potatoes, two carrots, one sliced onion, 5-6 crushed garlic, 1/2 inch of a finely chopped ginger and in spices take roasted cumin powder, red chili powder, salt, turmeric powder and roasted sesame seeds.
- Heat a pan with two tbsp mustard oil or sesame oil. Temper with 1/2 tsp cumin seeds, 1/4 tsp asafoetida powder and add the garlic, ginger and onions.
- Sauté for 30 seconds then add the potatoes and carrots. Stir fry for a minute then add 1/2 tsp turmeric powder and 1 level tsp salt.
- Stir fry for few seconds then add the spinach greens. Stir occasionally and cook covered in a high heat till the moisture is reduced.
- Before removing from the heat sprinkle a tsp slightly roasted cumin powder and red chili powder. Stir fry uncovered for a minute then serve it and garnish with a tsp roasted white sesame seeds.
