Highlight Recipe : Chicken Handi


TWCT is proud to publish its Star Home Chef Mrs. Ferdousi Majumdar's recipe, Chicken Handi as a highlight for today. Ferdousi is a talented and creative home chef from Delhi, India and has shared many of her day today recipes with us over the years. Her Recipe Chicken Handi is a perfect curry to relish this winter.

Recipe follows.


  • First marinate the chicken with ginger garlic, salt and some yogurt for one hour. 
  • Then heat some oil and ghee in handi ( a deep, wide-mouthed cooking vessel) and fry some sliced onions until they turn brown.
  •  Take the onions out of the handi. In the same handi add some finely diced garlic and fry for some time thereafter add chopped green chilies and saute for some time. 
  • Add some crushed cumin and coriander seeds and saute for some time after which add the fried onions, some chopped tomatoes and let it cook for some time. 
  • Season with red chili powder,turmeric powder, cumin powder, coriander powder, stir everything well and then finally add the marinated chicken into the handi. 
  • Mix everything and fry well until the oil which is released from cooking floats on top. 
  • Then add some water and yogurt and let it cook covered for ten minutes.
  •  Finally at the end add a little fresh cream and dry fenugreek leaves and cook for another six minutes. Sprinkle some homemade garam masala (easily available in Indian stores) on top of the chicken handi and serve with rotis or rice.
