Highlight Recipe: Fried Till Pitha (black sesame rice flour dumplings)


TWCT is proud to publish today's highlight recipe, Fried Till Pitha (black sesame rice flour dumplings) by its talented home chef Mrs. Momina Ahmed from Mumbai, India. Momina made this traditional Assamese delicacy with an interesting twist.

Recipe Follows :

1. Sticky rice powder 2 cups.

3. Jaggery (gur)1 cup grated.
4. Salt-a pinch.
5. Turmeric powder 1/2 half tsp.
6. Oil for fry

Method-

  • For stuffing- Dry roast sesame seeds low flame until the aroma comes out.let it cool and grind coarsely. Mix Jaggery and sesame powder. Keep it aside.
  • For dough- Take 2 cups of sticky rice powder add salt, turmeric n half cup of hot (boiling) water to make the dough. Always remember...  add small quantity of water to mix with the help of spoon sticky rice powder required less amount of water.Make a soft dough.
  • Now make lemon size balls and with the help of your palm flatten it like a puri (round bread) . Place the sesame mixture in the middle and fold it into a semi circle shape now with the help of two fingers try to give design on the edges.Now deep fry the pithas. Serve hot with tea.
