Highlight Recipe: Carrot and dry coconut laddoos


TWCT is glad to publish today's highlight recipe, Carrot and dry coconut laddoos by our talented home chef Mrs. Ferdousi Majumdar from Delhi, Mumbai. She gave an interesting twist by keeping two key ingredients carrots and desiccated coconut.

Recipe Follows:

Ingredients:

  • Three cup grated carrot, 
  • One third cup coconut powder, 
  • One third cup milk powder, 
  • Sugar half cup, 
  • Cardamom powder half tsp, 
  • Three tsp ghee (Clarified butter), 
  • Some chopped dry fruit, 
  • Some coconut powder for coating the laddoos.
  • One quarter cup milk
Method:
  • First fry the grated carrot in ghee (Clarified butter) for some time, then add sugar and milk cook for some.
  • Add desiccated coconut, milk powder, finely chopped dry fruits, cardamom powder and cook on slow flame till the mixture dries up and leaves the side of the pan.
  • Take the pan off from the flame and cool it for few minutes. Grease some clarified butter on your palm and make round balls (laddoos) and roll them slightly on desiccated coconut and serve.
