HIGHLIGHT RECIPE : CHICKPEA FLOUR SAVOURY CUPCAKES WITH HOMEMADE TOMATO CHUTNEY


TWCT is glad to publish Ruma's another Air Fryer healthy yet delicious recipe Chickpea Flour Savoury Cupcakes with Homemade Tomato Chutney. Gluten free with nice Indian flavour these cupcakes are really a good snacks and I'm sure you would like to trying it out.

Recipe Follows

Ingredients:

For cupcakes

* 3 tablespoon oil
* 1/4 teaspoon Asafoetida powder (optional)
* Salt 1/2 teaspoon
* Chickpea flour 1 cup
* Yogurt 1 cup
* 1/2 teaspoon baking soda
*Carom seeds 1/2 teaspoon
* Black salt for seasoning

Method
Mix yogurt, salt, asafoetida, carom seeds, oil well. Then mix the flour and get a good mix and make a nice cupcake batter, if required add water too. Now take some cupcake moulds and grease all. Preheat the Fryer at 180c for 4 minutes. Now take some batter separately in a bowl as per requirement of first batch and mix 1/4 teaspoon baking soda, mix well immediately fill the batter into the mould and start baking at 180c for 16 minutes . Sprinkle little oil on top in the halfway.

Next batch also prepare like this way. Here I am using baking soda at the last moment as it helps to rise well the baking goods.
Before serving sprinkle little black salt on top.

For The Tomato Chutney
Ingredients
* Medium size tomatoes 6 nos.
* Granulated sugar 3 tablespoon
*1/4 teaspoon fenugreek seeds
* 1/4 teaspoon mustard seeds
* 1/4 teaspoon fennel seeds
* 1 tablespoon vinegar
* 1 teaspoon oil or butter

Method
Make puree of the tomatoes. Heat oil/ butter and fry the whole spices till its aroma comes out. Add the puree with sugar into the oil and stir cook till the moisture reduce. No add water. Add the vinegar before 2-3 minutes removing from the heat. And here is your nice , flavourful sweet chutney is ready. Enjoy with the savoury cupcakes it's delicious.
You can store it for long time too.
