HIGHLIGHT RECIPE : GRILLED EGGPLANT IN MUSTARD SAUCE


TWCT is glad to publish today's highlight recipe as Grilled Eggplant in Mustard sauce, by Mrs. Ferdousi Majumdar from Delhi, India. With mustard flavour this is delicious recipe with South Asian Flavour and she made it perfectly.

Recipe Follows:

Ingredients.

* Big size round Eggplant 1(sliced in round shape )
* Mustard oil/ olive oil as per requirement
* Salt as per requirement
* Turmeric powder as per requirement
* Red chilli powder as per taste
* 1/2 teaspoon panch furan , that is a mixture of 5 aromatic spices of fenugreek, cumin, mustard, fennel seeds and onion seeds in equal quantities.
* 1 onion (finely chopped)
*1/2 teaspoon grated ginger
*2 green chillies (finely chopped)
* 1/2 teaspoon cumin powder
*1/2 teaspoon coriander powder
*2 and 1/2 teaspoon white mustard paste
*1/2 cup of beaten curd

Method.

Take the eggplant slices, season with salt, turmeric powder and red chilli powder and grill them applying oil.

For the sauce, heat 1 tablespoon mustard oil, add 1/2 teaspoon panch furan spices and let it fry till its aroma comes out. Now add the chopped onions, stir fry few seconds then add the grated ginger and the chopped green chillies and fry well for couple of minutes. Then add the turmeric powder, red chilli powder, cumin powder and coriander powder. Add the mustard paste with 2-3 tablespoon water and cook till the moisture reduce. Then add the beaten curd into it, stir and cook for a minutes. Add required salt and the grilled eggplant pieces and cook for couple of minutes. And here is delicious Grilled Eggplant in Mustard sauce ready to serve. Enjoy with the rice or roti it's delicious.
