HIGHLIGHT RECIPE : PORK BELLY WITH BAMBOO SHOOT FLAVOUR
TWCT is glad to publish today's highlight recipe Pork Belly with Bamboo Shoot Flavour by wonderful home chef Mrs. Antara Baruha from Bangalore, India. This is a slow cooked twist recipe with ethnic Assamese flavour and no fate added as the meat is cooked in its own fate.
Recipe Follows
Ingredients:
* Pork Belly 500g
* Lean pork meat 250g
* Bamboo shoot 100g ( grated)
* Onion medium size 2 (finely sliced)
* Ginger paste 1tablespoon
* Garlic paste 1tablespoon
* Red dry whole chillies 4 (soaked and pounded)
* Green chillies 3 (finely chopped)
* Turmeric 1/2 teaspoon
* Salt to taste
Method
Wash and clean the meat thoroughly and cut into thin rectangular slices. Pressure cook it with salt for 2 whistles.
When done , rinse it with warm water.
Take a deep heavy bottom pan. Add the meat into it with some warm water so that the meat dip well into it.
Cook on high heat until meat releases its fates.
Keep an eye on cooking, so that meat don't get stuck to the bottom of the pan.
After releasing sufficient amount fates, turn the heat low and add the sliced onions, stir and cook covered well in a medium heat until the onions becomes translucent.
Then add the ginger, garlic paste, stirring well let it cook.
After that add the red chilli paste with a cup of warm water.
Stirring well cook until the meat turns nice golden brown colour.
When moisture of the curry reduce to half , add the grated bamboo shoot, stirring well cook till it dries and the meat releases fats.
Once done the meat will melt in mouth. With a strong tangy flavour your Pork Belly with Bamboo shoot is ready to serve.
