HIGHLIGHT RECIPE: MANGO MOUSSE CAKE

Ingredients:

1. plain flour 1 1/2 cup
2. granulated sugar 1cup, 1/2 cup for cake and other half for sugar syrup
3. egg 4 no's
4. oil 3/4 cup
5. vanilla essence or extracts 2 tablespoon
6. baking powder 1 tablespoon
7. baking soda 1/2 teaspoon
8. required mango for garnishing and 2 1/4 cup mango pulp
9. Gelatin 2 tablespoon
10.whipped cream
11. 1/4 cup powdered sugar
12. 1/4 cup condensed milk

Method:

In a mixing bowl add eggs, granulated sugar, vanilla essence and whisk well. Then add the dry  ingredients and mix it well. Transfer the batter into greased cake tin and bake at 180c for 30 minutes or till done.

Made a light sugar syrup with half cup of sugar and water for softening the cake.

After baking let it cool and cut the upper layer and remove it. Sprinkle the sugar syrup on it and keep it in a refrigerator for 30 minutes.

Next, in a cold bowl whip the cream , then add the 1/4 cup of mango pulp, 1/4 cup powdered sugar and condensed milk in it and mix well.

Then in an another bowl take the gelatin and let it melt in some warm water. After melting add this into the whipped cream mixture and make a good mix.

After 30 minutes take out the cake from the refrigerator , place it in a spring form cake tin and pour the whipped cream mixture on it and spread it nicely and keep it again refrigerator for another 30 minutes for set well.

Now made a mixture of remaining mango pulp, sugar and melted gelatin .

After 30 minutes take out the cake and place some finely sliced mango pieces on it and then pour the prepared mixture all over the cake and again let it cool in the refrigerator for some time till it set well.

Before serving garnish with some fruits and mango slices, its looks and taste great.
