HIGHLIGHT RECIPE:SMOKED CHICKEN KEEMA

Ingredients:
1. 300g boneless minced chicken
2. 2 tablespoon Olive oil
3. Whole Garam masala 2-3 green cardamoms, 4-5 cloves, 1" cinnamon stick, 2 bay leaves, 1/4 teaspoon black pepper.
4. 1 teaspoon finely chopped garlic
5. 3 onions finely sliced
6. 1/2 teaspoon ginger-garlic paste
7. 2 finely chopped tomatoes
8. 1/2 teaspoon non spicy Kashmiri red chilli powder
9. 1/2 teaspoon turmeric powder
10. 1/2 teaspoon cumin powder
11. 1 teaspoon coriander powder
12. 1 teaspoon Tanduri Chicken masala powder
13. 2 no's chopped green chillies
14. 1/3 cup yogurt
15. Salt to taste
16. 1/2 teaspoon Garam masala powder freshly grounded that is 1 black cardamom,2 green cardamom, 1' stick cinnamon, 1/4 of a nutmeg and 2-3 cloves.
17. 1 teaspoon ghee/ clarified butter
18. a piece of burning charcoal for smoking

Method:

Heat oil , fry the whole garam masala in it until its aroma comes out. Then add the chopped garlic and fry for a minute . Next add the sliced onions and fry well until it turns little brown. Then add the ginger-garlic paste and fry well. After that add the chopped tomatoes and cook till it becomes mushy. Add the spice powder of turmeric , red chilli , cumin, coriander and stir, then add the minced chicken and stir fry for some time, sprinkle the tandoori chicken masala powder, chopped green chillies, stir and add the yogurt. Add the required salt and stirring well cook covered on medium heat for 10-15 minutes. Finally sprinkle the garam masala powder and again cook covered for a minute then remove from the heat.

For smoking flavour place a metal bowl in the centre of the cooked chicken, put a burning charcoal in it and pour the clarified butter on it for a nice smoking flavour and immediately covered with lid and keep for 10-15 minutes.
