HIGHLIGHT RECIPE easy: SIMPLE FISH CURRY WITH RIDGE GOURD AND TOMATO FLAVOUR
TWCT is glad to publish today's Highlight recipe Fish Curry with Ridge Gourd and Tomato Flavour, made by Wonderful Home Chef Nilakshi Bora from Assam, India. This is a very popular summer river fish delight from Assamese delicacy and very easy, basic fish curry .
Recipe Follows:
Ingredients:
Fresh river fish fillets 5-6 (rahu/ catla)
Turmeric powder 2 teaspoon
Salt as per your taste
Mustard oil 2-3 tablespoon
Ridge gourd 2-3
Tomato 2, chopped
Green Chillies 2-3
2-3 ridge gourd, peel the skin and roughly chopped
Fenugreek seeds/ Methi 1/2 teaspoon
Onion 1 chopped
Method:
Marinate the fish fillets with one teaspoon turmeric and one teaspoon salt. Heat well the oil and shallow fry the fish pieces. In the remaining oil, let fry the fenugreek seeds, then add the onions, green chillies and fry for a minutes, then add the tomatoes. Add the salt and remaining turmeric powder and fry till the tomatoes turn soft and mushy.
Then add the chopped ridge gourds and stirring well cook covered for a minute. After a minute when the veggies turn soft and started release water, then add the fried fish pieces and cook covered until the moisture reduce.
Finally add 2-3 cups warm water with required salt and let it cook for 1-2 minutes. Before serve sprinkle with fresh lemon juice.
Enjoy with aromatic steamed rice, it's very soothing.
