HIGHLIGHT RECIPE: GREEN CHILLI SAUCE


TWCT is glad to publish today's Highlight Recipe tongue tantalizingly delecious , Homemade Green Chilli Sauce, made by wonderful Home Chef Mridusmita Neog Baruah from Dehradun, India.

Ingredients:
300gm green chillies 
10gm Ginger
3cups white vinegar
75gm salt
1tsp SodiumBenzoate.
Procedure :
Rinse the chilies thoroughly with water and drain out the excess water from them. Allow the chilies to dry out completely, remove the stalk from all the chilies. Cut the chilies into pieces. Keep them aside.
Peel off the skin from the ginger baton and chop it into small pieces.
Dissolve the salt in vinegar and soak green chillies and ginger in it for 2 to 3 hours.
Heat the mixture uncovered and bring to a boil.
Cook till it thickens. a bit. Take it off the heat and let it cool.
Grind the chilly mixture into a fine paste. Take lit paste in a small bowl and Dissolve sodium benzoate in it. Then mix the dissolved sodium benzoate with the green chilly sauce. Homemade green chilly sauce is now ready. You can now store your sauce in clean glass bottle for 6 months without keeping in fridge.
