HIGHLIGHT RECIPE: PANEER KOFTA IN ZAFRANI MASALA
Paneer kofta in zafrani masala. In my own style as always
๐Here is my recipe.

Mix 200gr homemade paneer with one boiled potato, some chopped raisins, salt, chat masala, jeera powder half tsp, half tsp chilly powder, one fourth cup rice flour, some chopped coriander leaves, grated ginger one fourth tsp, pinch of garam masala powder and made some small small balls and deep fry them in medium hot oil.
Or you can fry them in appe pan also. For gravy heat 1tsp olive oil and 1tsp clarified butter, add one piece cinnamon, two green cardamom, two three cloves and fry for one minute then add two finely chopped onion and fry till onion turns little brown.
Add one tsp ginger garlic paste,, one big tomato finely chopped and mix well till the raw smell goes.
Then add one third tsp chilly powder, half tsp turmeric powder, one tsp freshly made spice powder of cumin, coriander, fennel, ajwain, black pepper and mix it well.
Add half cup homemade curd cook for two minutes.
Add one fourth cup of mixture of cashew nut and raisin paste. Cook covered for five minutes add half cup warm water. Cook for another five minutes add saffron strings soaked in hot milk to the masala and half cup milk. Give it a good stir and add the paneer balls and decorate with coriander leaves and serve with paratha or roti of your choice
