HIGHLIGHT RECIPE : SEMOLINA SAVOURY CAKES WITH BEETROOT SAUCE

This is homemade low calorie cow milk yoghurt flavour steamed savoury semolina cakes and homemade ruby red Beetroot sauce with mint green and asafoetida flavour.
Recipe Follows:
Ingredients:
For the cakes:
Semolina 3 cups
Yogurt 1 cup
Water 1 cup
Salt 1/2 teaspoon
Baking soda 1/2 teaspoon
For the sauce:
One steamed Beetroot
Half cup mint greens
One finely chopped onion
One finely chopped green chilli
Pinch of asafoetida powder
Salt a teaspoon
Oil a teaspoon
Lemon juice a tablespoon
Method:
First in bowl, take semolina, salt, yogurt and required water for a pancake consistency batter.
Mix well and keep covered for 10-15 minuets, until the mixture turn soft.
For the sauce wash and clean properly the Beetroot and pressure cook it with cup of water for 10-15 minuets, after one whistle, cook it low heat.
Now heat the steamer and add the baking soda into the semolina batter. Mixing it well, if required add little water into it.
Take some greased small bowl and fill the batter half of the portions.
Steam all the ready batter for 15 -20minuets .
After that let it cool and de mould it.
For the sauce, peel off the cooked Beetroot, roughly chop and grind into a paste with salt and little water.
For sauté the sauce , heat oil, add mustard seeds, after roasting well turn low the heat, add the asafoetida powder and the onions and mint greens.
Sauté it and add the prepared Beetroot paste into it.
Stir fry for a minute and remove from the heat.
Before serving sprinkle the lemon juice and enjoy with the semolina cakes.
