TWCT is glad to publish today's delicious regional Indian recipe Pumpkin Leaves Fritters with Pink Lentil Flavour, made by popular Assamese Home Chef Pompi Sarmah Khaund from Guwahati, Assam, India.
Recipe Follows:
Ingredients:
1. 8-10 tender pumpkin leaves
2. 1 cup pink lentils (soaked)
3. 4-5 cloves garlic cloves
4. 1/2" ginger
5. green chilli 1-2
6. onion 1(finely chopped)
7.turmeric powder 1/4 teaspoon
8. salt as per taste
9. cumin powder 1/4 teaspoon
10. coriander powder 1/2 teaspoon
11. black pepper powder 1/4 teaspoon
12. little chat masala powder or black salt powder
13. chickpea flour / rice flour 2-3 tablespoon
14. oil for fry
Method:
Grind to paste lentils, garlic,ginger and green chillies. Add turmeric powder , salt and onions.
Season the pumpkin leaves with cumin powder, coriander powder, salt and pepper powder.
Make a batter of chickpea flour or rice flour with required salt, little spice powder of all the mentioned flavour.
Take a leaf stuff with the pink lentil mixture and dipping in the prepared flour batter coat well.
Like this make all the leaves and dip fry or shallow fry all the fritters in mustard oil or other oil.
Before serving sprinkle little chat masala powder or black salt powder and enjoy.
It's a delicious side dish or a appetizer.
