HIGHLIGHT RECIPE: BROCCOLI AVIAL

BROCCOLI AVIAL
Avial is a traditional side dish of Kerala.
Ingredients
Broccoli-1
Carrot -2
Baby corn-6-7
Pea - 1/4
Coconut- 1cup
Cumin- 2 tsp
Coriander leaves (optional)
Chilli- 3-4
Yoghurt - 1/3
Water as required
Few curry leaves
Coconut oil 1 tsp.( Patanjali nariyal oil is available in anywhere.)
For tempering
Oil 2 tsp
Mustard seed - 1tsp
Hing - 1/2 tsp
Dry chilli (as required)
Few curry leaves
Grind coconut, cumin, green chillies, coriander leaves, yoghurt and salt into a smooth paste.Keep aside . Cook the veggies with salt and pepper. Make sure that broccoli along with other veggies don't get over cooked. It is better to have the crunchiness. Add the paste to the veggies, mix well and cook for some time. Pour some coconut oil into it. And give a tadka with ghee, mustard seeds, curry leaves , dry chilli and hing. And it's done. Those who don't love broccoli, please try this recipe.
