TWCT is glad to publish today's Highlight Recipe Khao Niao Mamuang made by wonderful Home Chef Rupanjan Das from India.
Recipe
Today's Preparation is called Khao niao mamuang (Thai: ข้าวเหนียวมะม่วง), which translates to Mango sticky rice, is a traditional Thai dessert that typically consists of sticky rice cooked with coconut milk and served with fresh sliced mangoes on top.
After washing the sticky rice, pressure cook for 1-2 whistles. After opening the cooker, allow the rice to cool completely. In 200 ml coconut milk (I used homemade brand) add sugar according to taste stirring continuously until the milk thickens. Now mix half of the coconut milk in the rice and allow to rest for 5 minutes. Serve the rice mix in a bowl, pour the rest of the coconut milk and garnish it with sweet chopped mangoes. Optional garnishing are chia seeds (as used here), sesame seeds etc.
